I wonder why they didn't they go with Toadette or Toadsworth since they are more recognizable then you know... a blue toad.

Blue Toad makes sense to me, he was a player character in three main series games, and Toadette and Toadsworth would've been kinda needlessly noisy in terms of detail (both to look at as players and to create/animate as developers) compared to Peach's regular ole Toad classic.
