What should we look forward to in volume 2?
From the RWBY wiki...
UPDATE: From what we got in Volume 2 (and subsequent volumes) so far, we have most of our questions answered,
-We now know who Cinder, Emerald, and Mercury are, but we don't know what their ultimate goal is or why they need Torchwick to be part of their plot, or why they need so much Dust...
-White Fang is helping him because he is a means to an end in their fight against humanity...
-Penny IS in fact a robot, or moreover, "the first synthetic person capable of generating an Aura"
-"Queen has pawns" could either be referring to Cinder or some other unknown evil that we might possibly not know about EDIT: now known to be referring to Salem
-Jaune's Aura (or Semblance as a matter of fact) is mentioned in the DVD commentary of Volume 1 to be likened to a shield, being protective in nature
-The "simple soul" is speculated to be Ruby, but I think it might Jaune (this trope has happened before, I know you guys are thinking it too 
-Yang could've possibly been searching for the whereabouts of her mother, and believed that Junior might know of a possible location for her, only he didn't...
-MOST OF ALL.... the reason why Ruby and Yang have different last names is because they're half-sisters!! Same dad, different moms. Their dad, Yang's mom, Summer Rose (Ruby's mom and also the same person whose name is inscribed on the gravemarker in the Red Trailer), and Qrow were all on a team together. Yang's mom left shortly after she was born, it is unkown if she is either dead or alive, and then Summer Rose fell in love with Yang's dad and gave birth to Ruby. However one day, Summer left for a mission and never came back...
Well, that clears up a lot of points on here...
....but still, it's fun to speculate! ^_^

I always figured Roman collecting Dust was for the bombs on the train, or maybe to give the White Fang resources

I agree with you in thinking that "Queen has pawns" refers to the idea Cinder is also a pawn in the grand scheme of this Queen.
Also I like to think this Queen is really Yang's mother because she left and is still alive.

What you're referring to is the Transient Princess, a nickname for Rinoa in Monty's Dead Fantasy series.
While that is true, the character Raven Branwen also bears a striking resemblance to the person's picture on Yang's phone, and many predictions think that Raven is Yang's mother

Maybe Penny is like Pinnochio, in which she wants to be a normal girl and have friends instead of being a robot. And what if Ruby was her "shining star," in which Ruby made Penny's dream come true of having friends and being treated like a normal person.

the one thing is im 99% sure it was confirmed that Yang and Ruby are sisters via adoption. one of them was adopted and my guess is Yang because "summer rose" was on the tombstone where Ruby's been and in "Red Like Roses Pt. 2" (the full song) the second, older sounding voice is supposedly Ruby's mother. :-3

I know its a long shot but your theory might not be right be right.
If the world of rwby has the same legal system as the U.S then the adoptive parent of ether rwby or yang must go through with an investigation to check if the are actually ready to take care of ether rwby or yang depending on who was adopted, but nether of us know if rwby's or yang's parent are still around and about. I can prove this with how yang was in her trailer, thus proving that yang might be able to take care of herself as well as rwby. so with this there's a 50-50 chance that your theory is wrong!
unless you have more evidence proving that your theory is correct it won't hold sqat. your thoughts and observaions will do to.
