Everypony needs a way to relax. Twilight has reading. Pinkie Pie has eating sweets. Fluttershy probably cuddles some soft, fluffy animals. Rainbow Dash has practicing stunts, sleeping on clouds, and dreaming of joining the Wonderbolts. Applejack certainly needs a way to unwind. Why not listening to some country music?

I haven't watched all the episodes, though in most of them Applejack is working. She has worked herself past the point of exhaustion in "Applebuck Season" so there is precedent for her being a workaholic. Though there are times were she does take some time to relax. She parties with everyone else at Gummy's birthday party in 'Party of One' and at pinkie's party from the same episode, though those are both Pinkie Pie parties, so I don't know if they count. I haven't watched 'Look Before You Sleep' though it is a slumber party, so I can imagine AJ took things easy there. Might be other cases were AJ is relaxing and taking it easy in episodes I haven't watched.

In the slumber party, AJ and Rarity to refuge in Twilight Sparkles home from a bad storm. The storm looked like it would last all night, so Twilight wanted to have a sleep over. While Twilight was setting up the activities, AJ and Rarity were having a secret war with each other. A clash of ideologies, town mouse vs. country mouse. At the end, AJ relaxed with hot irons in her mane and facial mud on her face. However, it felt like she did it for Twilight's sake. So I don't think it counts. AJ would have to relax for her own sake, and I haven't seen that happen, yet. I've seen 26 episodes, so far and there's nothing to see yet.

Though the idea of a bad storm in Equestria kinda puzzles me, since the weather is controlled by ponies and most likely scheduled. Though it could be that the pony in charge of that storm got carried away and/or careless.

I think there was an explanation at the beginning of the episode. I didn't catch it. It's possible that the storm was so bad that they couldn't control it. Or it was schedule for some much needed rain. IDK.

I guess I need to watch that episode soon then. Though I can imagine that somepony got yelled at, maybe fired if the storm wasn't supposed to be that strong. ... Hmm. What would the weather ponies do if they got defective material from the Weather Factory... Can you send a whole storm back to the manufacturer?

Probably. Unless Celestia (or someone representing Celestia) orders the storms from the factory. Though that would probably only be for huge storms. Normal ones are probably bought by the individual towns.
