Technically, fish lay eggs and then the males come by and ejaculate on them...then both fish wind up dying afterward...kinda kills the post-coitus afterglow she would normally enjoy, huh?

Actually, most fish do not follow the example you outlined. While pacific salmon are a prime example of semelparity, there are not too many other species of fish that reproduce that way.
Most fish have multiple reproduction cycles, while egg laying is prevalent, fertilization can occur externally or internally, it just depends on the species of fish. Some fish will even give birth to live young.
And if you want really different, check out seahorses. They court each other, the female then lays her eggs into a special pouch on the male, the male the fertilizes the eggs and and carries them until they hatch. And it's not just he's carrying them around either, daddy seahorse is actually supplying nutrients to the brood in this pouch and effectively is the one giving birth when the time comes. At that point,Β he's done with the kids and goes off to hook up with mama again, or off to find a new lady friend.
