I love your design with Knuckles' spikes going up, he looks a lot more powerful and super.
As per the colour, I would still go with bright pink like the classic Super Knuckles from genesis days.

Red inverts to cyan blue (or Sonic's Mania blue in a good instance i guess), and blue inverts to yellow, meaning that Super Knuckles could be blue, but the light Pink would also work
