But one thing confuses me: is her English name really "Rachel Moore"? - In Germany (where I come from) her Japanese name "Ran Mori" is used.

Yes, when Funimation acquired Detective Conan, they were tangled in some copyright with Conan the Barbarian (if I'm not mistaken)and the names of all characters were changed (with the exception of the few involved in murders). The only thing that they kept relatively the same is Shinichi's last name and a few letters. (Ran = Rachael, Mitsuhiko = Mitch)
