You just saved my ass. This was exactly the kind of "How to" I was needing. Whili working I always tend to forget about method and just do the first thing that comes in head. Sometimes it works, sometimes don't. This will help keep my focus.

My watercolour can't even be called watercolour..

Have you tried using a spray bottle? I spray my paints in my palette with water to help soften the paint before I begin, then use a wet brush to help the reconstitution of the paint.

How do you keep the pencil from bleeding into the watercolor? Whenever I try to paint on top of pencil, the graphite makes the watercolor gray. ; v;

That's a very nice walkthrough. Thank you for taking the time to show people how you work.
As for your mouldy watercolours, you really should get rid of the mould layer, it can be dangerous for your health. (Forgive me for mentioning it, I know it's none of my business, but mould can be really bad for your lungs and other organs. articles.mercola.com/sites/art… )
