They did... Technically. I mean, you can see Zelda transforming into Sheik in SSBB, but that still doesn't mean that she's not merely assuming another body, gender and all, especially since Sheik in that game was made a bit more feminine- could be her recreation after OoT, since I think it's TP Zelda...
Iunno, I've always subscribed to the belief that Sheik was a boy. +shrugs+ Can't believe that Zelda would be that capable, regardless of gender/appearance.
