First of all, what kind of paper are you using? Your standard printer paper or light sketchbook paper won't be enough for watercolors. Watercolor paper is very thick and absorbent, which makes the paper warp less and gives you greater control over the paint. If you're going to use watercolors, I'd suggest that you get some watercolor paper if you don't already have it.
I find it's easiest to start with the darker areas and build up. Like, put your shadow color in the places where shadows should be, a little thick. Use some water to move the color out to fill some lighter areas while thinning out the color a bit. Of course, you don't want to just use one color for each area, but that's a good way to start, I believe.
Watercolors are perfect for blending, as all you really need is a touch of water and whatever colors you want to use together. If you mess up, you can use a paper towel to lift the water up before it dries so you can try again. Also, if something is dried on that you want to change, rubbing a bit of clean water into it might loosen it enough to be liftable via paper towel/sponge/whatever. It's best to do any lifting before the paint dries, however, as it's easier, especially with thicker colors that might not respond to much to water after they've dried.
Lastly, this can be applied to more than watercolors- don't just use different shades of one color to fill an area. For example, for brown hair, don't just use a base coat of brown, darker brown for shadows, and a lighter brown for highlights. If you really look at things, you can see tons of colors in people. Personally, I tend to see a lot of reds and purples in skin and punch them up in my paintings to really bring them out. Step outside of what is easily visible, and train your eye to look up for the thousands of colors that combine to create that one obvious effect.
Sorry for the essay, but I hope it's somewhat helpful.

You're welcome! Feel free to ask any more questions you have. I've been experimenting with watercolors this year, and I've learned a lot of things that I personally find helpful.
