VERY simply.
The maze is but a choice bet 2 branches, One goes to food. The other to just a blind end. Soon the planarian avoids wasting time & effort and consistently goes to the food (raw liver usually).
Even more amazing is training -slime mold ! The colony of amoebas is like a hive mind or mobile brain., They can learn a maze. They do well on oatmeal. I do not know how complex the maze is, but they can get good at it,.
