Well, I like the idea of a Courtney/Zoey friendship and I'm okay with taking that friendship to the next level...
My favorite Courtney ships are with Gwen and Scott, though admittedly Courtney/Scott was poorly executed in canon and could have been handled better.
I like all your shippings with Bruce. Harley is fun, Diana is sweet, and Selina is my favorite.
As for Mabel ships, my favorite is honestly with Pacifica because of a little AU called Reunion Falls...

A Gravity Falls AU which had Mabel and Dipper seperated at birth. Dipper was raised by Stan and grew up in Gravity Falls. Mabel finds out about her twin brother and goes to Gravity Falls. Them being seperated significantly changes some of the relationships and personalities. It's pretty interesting.
