that's cuz before, they were just using the multiplayer from halo(s); and this season they hired Mounty Oum -of Haloid and Dead Fantasy fame (check them out if you haven't seen)- who exports game assets into an animation program and adds MoCap and stuff...

they've been using it all season: the scenes with Doc stuck to the stone block; one time, i think Sarge got hit with the warthog and grabbed his shotgun out of the air and fired it; several times they just needed specific animations of people standing up or other things that can't be accomplished by moving the heads up and down or aiming weapons in multiplayer; it's just that the most recent episode was meant as an epic showcase of Tex's total badassery, the kind of stuff that Monty is known for, so it was the majority of the episode. and from the looks of the end of ep10, ep11 is going to be an epic throwdown, so more fantastic Oum-y fightingness!
