Given that both Nick and Judy were victims of differing forms of racial prejudice, I think it makes definite sense to make them from minorities in humanised form. That's good thinking on your part!
Maybe it's me (and, full disclosure, I'm a white European male), but Judy looks Latina to me in this picture. The 'almost white but not quite' attitude experience by people from Latin America fits in with the way the larger cops saw Judy - Like them but not quite 'one of us'.

I usually see Nick as white (with me being Caucasian and all), but Zootopia is about racism, and he is the minority, so it makes sense for him to be black. But 90% of human Zootopia art is the anime-themed (and anime is SO weird) so I just avoid it the best I can.
But the picture is really nice.
