I'm really impressed with the textures, 90% of my stuff comes out really slick looking, which is fine but sometimes I wish I had a clearer idea of how to get good textures other than "by accident" as I'm prone...

Oh, with this piece I actually used a lot of the default round brush (I usually keep it set on eighty-something opacity) in the first stages and kind a scribbled in the shading.

Well, it depends what you're going for. Different artists have their own feel, and there are many who use cell shading and the 'slick' coloring style to their advantage. As for me, I've been stuck in limbo--not really sure what way I want to go... which takes me to the point you made about happy accident. Don't worry about those; the things I like best have not neccessarily been planned. But that's a secret us artists keep between ourselves. If you want to go more texturey, you can look around at other people's work to see what you like and experiment. As for me, with any coloring I do, whether watercolors, colored pencils or digital, I go over and over with color and with different colors. With digital, I don't know what program you use, but there should be a number of different brushes to use; try picking some that have a chalky feel, use 'push and pull' techniques, and I've found the alt button (to pick up neighboring colors on your canvas while painting) to be my friend.
