Well ink is actually their blood, but they still basically use it for writing. Probably not using their own blood, but using the normal ways of making ink. Or perhaps like squids or octopi they can use it harmlessly, then replenish their supply like how we can replenish our own blood cells.

I like the idea of it being like squids, makes it slightly cuter and gives them something they could market~
I'd imagine they'd be good writers, so they could make quite the potent scholars, novelists, and ink producers~
And then they play paint-ball with their ink when they're bored and spontaneously can turn into squids
