I didn't see any of the final evolutions when I chose because I hadn't payed much attention to the newer versions lately but I thought I would give it a try. I saw some Alolan Pokemon but none of the starters xD I was very disappointed c,: it seems like they were going one way with it then decided to change it up with the final evolution xD

I chose Poplio because of its final evolution.
I followed Pokemon leaks about Sun and Moon pretty closely so I knew about the final evolutions before they released them.

Where can you find them? I don't know 'cause I don't have much of an interest in them (even though I have all the plushes??) but I'm always eager to learn about Pokemon XP

So I believe it's on the second island on the route before the farm. I believe route 3 or 4, and they tend to call for help pretty quickly. I caught mine by using quick balls. You usually fond them around level 12-13 and they mostly evolve around level 14-19. If you want Sylveon they have to know a Fairy type move in the selection. If you want Umbreon/Espeon you you evolve it during the day/night. For Leafeon there's a rock you find during one of the trials in the forest like area on the second island, I'm unsure about Glaceon, but for the main types you buy the stones to evolve them.. more likely than not, they usually know a fairy type move when you first capture them so you sometimes have to put off them evolving until you can have them learn a new move if you don't want Sylveon c:
