Believe it or not, I did this exact same thing about four years ago. (It was probably the same scenario, too.) I built this ride, and set the launch speed past what would've been sanely safe. As expected, the train rocketed off the tracks, and it cost me nothing! (Even if there had been people in it!)

Try this,
when you have a large park up and running, start setting the scrolling signs to "no access" and divert all the people into one small area.
Then get out the shovel and turn that large area of walkway into a raised platform over the hole in the ground.
Then delete all the platforms so that the people fall into the hole.
Then, fill the hole completely with water.
I've managed to kill 1,644 people, all at the same time that way.
I watched my guest go down from about 4,000
and my rating dropped from 900s to very low

lol, I wait till all the peeps have been sucked dry of money, then I kill them as brutally as possible. I remember I made like 20 shuttle loops and sent them all flying everywhere. It was like Armageddon. You should try it!
