Looking back at this after a long time. Occured to me that the acts of catching and releasing aren't exactly good or evil, they're just parts of the same, two halves of the same coin.
You could argue that catching is evil since it imprisions the butterflies. On the other hand, you could argue it's a good act, as the jar's safe and sheltered.
You could argue that releasing is good, it gives the butterfly back it's freedom. You could also argue it's evil, it forces the butterfly back into the dangerous world from the relatively safe jar.
Given the understanding between Aziraphale and Crowley, in which they're shown on multiple occasions to identify with each other more than their superiors, such an ambiguous moral activity seems great

Good Omens is right in there as one of those books you can set down and read days, weeks, and months later, and it's still as satirical, amusing, philosophical, comical, tragic, and commentative on humanity as the day you first cracked open the cover.
