Shahnaz is a Persian name meaning "king's pride"
Shahnaz had settled much earlier than the other daemons and her form, the elders said, was further proof that he would be a great warrior. A great Khal. It took some time, years, for him to become such but he did. He became a great Khal. A warrior and killer renowned enough that eventually a bride was offered in exchange for those skills.
The girl, Daenerys, was beautiful. Hair like moon and starlight. She was everything he had ever wanted in his Khaleesi.
"She will need to learn strength," Shahnaz told him after his first coupling with his new bride. "Now she is weak, she will not be accepted if she is weak."
Drogo shook his head, watching over a sleeping Daenerys, gently combing his fingers through her hair. "She will be strong," he said with a small grin. "She has fire in her. It just needs to be woken."
Shahnaz rumbled as she moved closer to both her human and his bride. She prayed Drogo was right.

I understand perfectly well how important the horse is to the Dothraki and their culture, it's the same sort of importance that the Mongols and Huns and dozens of other real life horse cultures had. But a daemon is the physical manifestation of a person's soul, and while I will agree that some Dothraki would have horses, not all would. And by saying that a Dothraki would only have a horse daemon is sort of narrow minded thinking.
There is more to the Dothraki, both as a people and as individuals, than their culture and their beliefs. Perhaps having a horse daemon, for the Dothraki, is a mark of greatness, of being blessed by the Great Stallion, affording the person a special / important place among the khalasar.
