Hello there,

In the canon, the only backstory we have about Princess Cadance is that before she was sent into the "alicorn realm" after defeating a love-stealing witch, she was living in a small village of Earth ponies who found and rised her as a baby pegasus. (See Twilight Sparkle and the Crystal Heart Spell )

In the comic project "The Princess of Love ", it was therefore decided to give to Cadance a different mane/tail style to reflect that origin. It was ultimately the bottom middle one that has been selected, as it was the one looking the most humble.
