The modified gnome icon as well as adjusting the thickness of the bar, if at all...... looks nice and slim, unless that's just because of the high resolution, not sure.

Activities icon can be changed with "Activities configurator" extension.
For slim top bar, I edited the gnome-shell.css file in the theme
