Huh, that's a good question. Probably an elephant, since that's a pretty earthly savanna back there. As I was paintin' him, though, I thought of him more as just a fantastical race, like an African centaur or minotaur.

Oh well mythological makes sense, but the flavor text makes it sound like he was once an elephant. Perhaps a cruel warlock transformed him?

Or perhaps transformed its his entire herd? His wistful look might be nostalgia for the simpler days of just foraging trees and shrubs and finding waterholes, and not having to deal with the trappings and complications of sapient society.
