I don't understand what's so special about the whole Flutterbat thing.

Individually there is a lot of people who like it that's all. I think most who do like it think it looks adorable, which I agree with (but to each their own). It's similar to the popularity of Coco Pommel. A lot of people just thought she was very cute (which i again agreed with..)
Another part of it was that people were wondering what was up with the lunar guards (the cannon bat ponies before flutterbat) and what type of pony they were given they didn't fit into any of the 3 known species. This was acknowledgement of that curiosity and a possible hint towards an answer. That said I still think they are a bit different, but we don't really know I suppose. People have loved the mysterious/unknown bat pony species long before Flutterbat was a thing... and really just wanted to know anything about them at all. Part of the love for them(and subsequently this) possibly stemmed from Luna's popularity.
