wow can the gems really do that? cause that's surprisingly useful skill when the gems let themselves go and eat human food.

The Gems bodies are essentially hard like constructs built around their bodies that can be regenerated if they die.
Although they do respond to eating and stuff (Amethyst inflated from eating a cloud once) so this has precedence.

okay I see. so even if one of the gems do get fat from eating human instead of their usual light source for food they won't be in danger or have one of those health problems?

Well they don't eat light, they don't eat anything (They CAN eat. Amethyst eats all the time, they just don't need to).
But yeah. As long as their gems are intact they can come back from anything.
