Monster Falls is (for short) an AU where everyone is/turn to monster. And right, Dipper is a centaur and Mabel is a mermaid.

Yup, Dipper is a centaur, or better said a deer-taur and Mabel is a mermaid.
But the whole idea of the Monster Falls AU is that there is a mysterious river in Gravity Falls which turns everyone who falls in it into a magical creature or monster. The main story is that Dipper finds the river, thanks to the Journal, but doesn't immediately find out what the water does. Grunkle Stan however thinks it's a great idea to sell the water as 'crystal-clear mountain water' and so everyone in town ends up with a bottle. By the time Dipper does find out what the water does - he falls in the river and when he climbs out, he has the body of a deer - it's too late and everyone in Gravity Falls has been turned into a monster. Hence, the name of the AU.
Ideas of who changes into what kind of monster can differ, but the main idea is that Dipper changes into a Deer-taur or 'Deerper', Mabel becomes a Mermaid or 'Mermabel', Grunkle Stan turns into a Gargoyle or 'Gargrunkle', Wendy turns into a Werewolf or 'Werewendy', Soos turns into a Clay Monster, Robbie a Zombie or 'Zobbie', Gideon turns into a Vampire or 'Gideonpire', Pacifica becomes a Medusa snake-monster or 'Passsifica', etc, etc.
Some people also make the story bigger by throwing Bill and the other Gravity Fall-monsters into the river (like the Leprechauns and the Hide-Behind), and they turn into humans. So, while the main Mystery-crew tries to find a way to turn everyone back to normal, every character has to deal with their new body, and the problems that come with it. This leads to lots of fun and creative stories (and art!), which I'm sure you'll be able to find on deviantart and on tumblr. Just search for 'Monster Falls AU'.

According to what I understood, the story is something like this:
Dipper finds a river, which, according to the journal, has something to do with monsters, but he can't read it. He falls inside and tells about it to Stan, which thinks about money and decides to bottle the water from the river and sell them. After the whole town drinks from the water, people starts changing into monsters. Dip is half deer, Mabel is a mermaid, Stan is a gargoyle, etc
