Nah, that's when the episode was released. In the SDCC trailer for Gravity Falls Season 2, we see various clips from 'Soos and The Real Girl', including first interactions between him and Giffany, and one or two scenes from the final sequence of the episode. So the episode had already been made/developed/the plot was already in play, it was simply a matter of refining, touching up and releasing the episode.

Personally, I liked that she was limited. Β Forced her to be creative. Β Plus I felt she was creepier using the arcade machines, animatronics, and wanting to digitalize Soos.
