They actually did that in another part of the movie too. When Coraline goes to tell the Other Father that supper's ready as he's about to play the piano. Right after he says "This piano plays me" the arms yank him to turn around and there are like 4 hands

It was deliberate. It's one of the ways to simulate motion blur in stop motion. Will Vinton tried a similar technique in The Little Prince but the method turned out looking a little surreal. Aardman uses the same technique occasionally (very, very sparingly) when a character travels too far a distance between frames. Coraline's arm is very thin, and it travels a great distance between the frames. so to prevent strobing, they compensated by filling the distance with an inbetween position.

I can assure you that this wasn't 'shopped. I'm pretty sure what happened here was just an example of really good pause timing on the picture-taker's part and really bad framing skills on the animator's part. XDD

It was deliberate. They added it in post. There are many techniques in animation that are used in place of motion blur. Our eyes are least forgiving with stop motion, but there are techniques like this used in all forms of animation. You can "blur" 2d by smearing the image: [link] but you can't blur puppets. Someone decided that the distance that her arm travels between frames when she throws the stone is too great, so to minimize "strobbing" they compensated by filling the distance with an extra arm.
