just thinking that as a space suit it would be better to have it as a one piece

It's never described in show how the suit works. The only time the characters have it on is in the final episode and there's no changing scene prior to their reveal. For all we know they could be one piece. This is just his interpretation of them based on the very limited appearance of the suit.
That said, I have only known a handful of anime that have a completely one piece space suit. Most do have the in piece.
