Cancer is the crab which bit Hercules toe while he battled the hydra, but this was in a freshwater marsh, so it should really be a freshwater crayfish not a marine crab or lobster.
Marine crabs often live on the shore and get covered and uncovered by the tides, for this reason, they seem to be peculiarly in synch with lunar cycles

The sign of Cancer was once represented by two donkeys. My donkey responds very strongly to lunar cycles. Liz Greene suggests that Cancer was originally represented by the Egyptian Scarab beetle
The fire signs are all connected with heroes (Hercules, Jason, Cheiron the tutor of heroes), the earth signs with fertility symbols (bull, earth goddess, sea goat), the air signs with Greek social and political symbols (twin kingship, justice, legitimised homosexuality). The water signs are a mystery to me, they are minor roles in the Greek myths, although two of them attacked heroes feet. Robert Graves noted how many mythical heroes injure their feet -Oedipus, Achilles, Krishna, Jacob, Bran, Cheiron etc.
