What are those two sticks coming out of the forestock? The gas system? And what do those three buttons on the scope and above the trigger do?

That's the bipod in its collapsed position. Gas system is above and bellow the barrel.
Buttons on the scope left side are RST (Reset) Zoom Out and Zoom. Right side will have buttons to operate the thermal and hyperspectral modes as well as an on/off.
Buttons above the trigger are CNCL (Cancel), ZRO (Zero) and TGT LCK (Target Lock). These are related to the targeting-assistance mode, which is tied into the additional optics on the scope.

Calibres I'm using are 4mm (pistols/SMGs), 4.5mm (rifles/carbines/LMG), 6.5mm (MMG/DMR), 11mm (HMG), 13mm (SPSR) and 15mm for airburst grenades. Few other special calibres as well like .55 (heavy pistol) and .460 (battle rifle).

12.5mm is a .50cal, for perspective. why he uses 4mm for pistols & SMGs is still beyond me.
