Necks...I swear they are evil...Here is all I know.. Necks angle forward slightly, the spine joins to the skull just behind the jaw and muscles join from the collar bone to round about the mid neck, ( specially in buff guys :'D)

Make note 'bout the trapezius muscle, people get confused with the area between the shoulder and vertical neck line. Love drawing that part for some reason!

Learning realistic anatomy can help a lot, even for anime artists... O_O
All you'd do is take what you see here, and simplify it to fit your style... ^^'
