Can you give me the recipe ?!!!! I know it's been eleven years since you posted this, but I'm a Cheddar Junkie and I've only just found you !!!!

Cheddar soup is pretty easy to make
3 tbsp butter
1 small onion, finely chopped
3 tbsp flour
2 cups chicken stock
2 cups milk
salt and pepper (for taste)
2 cup, medium cheddar grated (although I slip in a little old cheddar as well)
1 tbsp fresh parsley, chopped
1. Melt butter and saute the onion on low heat for 5 minutes (sweat the onions)
2. Remove from the heating element, add flour and stir well, cooking it over low heat for about a minute.
3. Slowly add the chicken stock, milk using a whisk.
4. Return to the heating element and bring it to a boil over medium heat until it starts boiling (stir constantly, it's milk)
5. Lower the heat, and simmer until it's thickens to a creamed soup consistency. (stir occasionally)
6. Taste, season with salt/pepper. simmer for a few minutes. (go easy on the salt, for me a pinch is plenty, the cheese is salted already)
7. Add the cheese, stir until melted.
8. Take it off the heating element, or turn it off to keep it warm for seconds.
(garnish with chopped parsley)
(goes well with toast)
