We will probably never know the real truth.
So this is my theory on a possibility on what their hands could look like.

Since Shadow is a science experiment alien hybrid. He didn't develop Paw pads. More of a hard texture skin (like black arms) with claws. But got 5 morbian fingers instead of 3.
His red fur stripe runs from the side of his arm, across half his hand, down to the ring and pinky finger. Palm side, it merges into the black arms marking.

Shadow has never thought it was odd not to have paw pads. Since humans don't have them and in his early life grew up (developed?) with them.

For Sonic and most morbians. They do have Paw pads with finger nails. Some species have claws, but it's very unusual for a hedgehog.

Morbian hands come in all shapes, sizes, markings and colours. All Morbians have a form of Paw pad.

No one has to agree with me, this is just my silly idea on the subject.
