This details out how I visualize and canonize the souls colors. If this doesn’t fit with your view or canon, that’s okay!
Human souls can have one, two, or three main defining colors/traits. The primary soul color is the strongest and most prevalent within the soul in question, the secondary soul color is second-most prevalent, and the tertiary soul color is the third-most. Other colors may be present in the soul, but they have little to no verifiable impact on the human in question.
Monster souls are always white. Through life experience and interaction with strong human souls, they can become “tinged” with one color and the listed tertiary trait for that color will likely be adapted into the Monster’s behavior. There is a small chance (about 10%) that the Monster will receive the secondary trait instead, but there is a much higher chance of the Monster incorporating the negative trait as well. Monsters cannot receive the primary trait.
Plumey/Tuffty Bitty souls are always white. By bonding with a human, their souls can become “tinged” with up to two colors and receive two traits (one secondary and one tertiary). Usually the first color to “tinge” the Plumey’s/Tuffty's soul will affect it the most, resulting in a secondary trait, but not always. If the Plumey’s/Tuffty's soul-bond with a human is broken, the color received will weaken substantially. If the Plumey/Tuffty is able to bond with a different human, the previous color can be overwritten and no trace will remain.
Below is the list of soul colors, their traits, description, and the magic generally associated with the color. (Again, this is how I canonize things, so it may be different from the original game or from your own views.)
Red
Main Trait: Determination
Secondary Trait: Ambitious
Tertiary Trait: Driven
Negative Trait: Egocentric
Magic: Power, Speed, Fire, Change
Description: This, as a primary soul color, can only be applied to human souls. Red souls are the powerhouses, able to amplify their desire and create change in the world around them. They are the ones best suited to getting things done and will pursue their goals with passion. Unfortunately, that drive to change the world can often be focused solely on their wants rather than what others may need, resulting in selfish, self-centered actions that can easily hurt those around them.
Coral
Main Trait: Stalwart
Secondary Trait: Steadfast
Tertiary Trait: Committed
Negative Trait: Stubborn
Magic: Stamina, Counter, Disruption
Description: This, as a primary soul color, can only be applied to human souls. Coral souls receive the bravery from orange and the determination from red. This makes them powerful defenders and best suited for protective roles. Turning their power inward, they can brace themselves and power through tough times and even tougher magic, making them one of the few that can directly stand up to an all-out assault from a red soul. Within this strength is a flaw however. The same traits that makes the coral soul so resilient can also make them rather stubborn, often refusing to budge on their decisions once they’ve made them.
Orange
Main Trait: Bravery
Secondary Trait: Courageous
Tertiary Trait: Adventurous
Negative Trait: Reckless
Magic: Inspire, Expression, Earth, Luck
Description: This, as a primary soul color, can only be applied to human souls. Orange souls are full of energy and the spirit of adventure, always wanting to push themselves further and testing their limits. They are best suited as leaders since they rarely back down from a challenge. Their exuberant energy can get them into trouble however. If not well-grounded, they can take unnecessary risks, placing themselves and others in danger to fill their need for excitement.
Amber
Main Trait: Honor
Secondary Trait: Responsible
Tertiary Trait: Modest
Negative Trait: Gullible
Magic: Enliven, Shine, Endure
Description: This, as a primary soul color, can only be applied to human souls. Amber souls inherit courage from orange and a strong sense of fairness from yellow, both of which fuel their youthful energy and sense of responsibility for the welfare of others. They hold themselves to the highest of standards to serve as an exemplar of what they want to see in others. However, amber souls can become blinded by their own sense of honor and wanting to see the best in others so much that they can miss the manipulations of others. This can often make them prime targets for less scrupulous individuals.
Yellow
Main Trait: Justice
Secondary Trait: Impartial
Tertiary Trait: Fair
Negative Trait: Fanatic
Magic: Clarity, Energy, Air
Description: This, as a primary soul color, can only be applied to human souls. Yellow souls are decisive and pragmatic, able to weigh the pros and cons on situations swiftly and efficiently. They have the strongest sense of right and wrong and will often do what they can to help others to make the right choices, lifting others up out of their problems by offering an objective point of view. Yellow souls can sometimes fall victim to fanaticism where they feel the need to push their sense of justice and beliefs onto others, forcing them to conform if need be. It is the “right” thing to do in their eyes.
Lime
Main Trait: Mercy
Secondary Trait: Charity
Tertiary Trait: Nurturing
Negative Trait: Controlling
Magic: Mend, Improve, Vigor
Description: This, as a primary soul color, can only be applied to human souls. Lime souls seek to right the wrongs in the world through kindness. They benefit from the energy yellow brings and the deep empathy encompassed in green, blending them into a bright energy that craves an outlet. They will often run or donate to charities, participate in events to help others or spread awareness, and often find themselves taking up occupations that benefit society (like teaching, social workers, etc.). Lime souls can sometimes mistakenly believe that they know what’s best, resulting in controlling behavior that does more harm than good.
Green
Main Trait: Kindness
Secondary Trait: Empathy
Tertiary Trait: Gentle
Negative Trait: Overprotective
Magic: Healing, Growth, Nature
Description: This, as a primary soul color, can only be applied to human souls. Green souls are the most understanding and empathetic of others’ plights. This makes them exceptionally good caretakers and will often place the needs of others before their own. However, green souls can become overly worried about the safety and care of others, causing them to fuss over their perceived charges in an effort to prevent harm from ever coming to them.
Cyan
Main Trait: Patience
Secondary Trait: Composure
Tertiary Trait: Calm
Negative Trait: Apathy
Magic: Calm, Peace, Cold/Ice, Intuition
Description: This, as a primary soul color, can only be applied to human souls. Cyan souls are the watchers, patiently waiting until their moment comes before they act. They are generally the best judges of character, able to use their strong intuition to gauge others but will rarely act on the knowledge they gained immediately. Cyan souls are often predisposed to procrastination and may even become uncaring towards others since very little is hidden from a cyan soul. In this state, they can come across as cold and unfeeling if their true feelings and intentions are revealed.
Blue
Main Trait: Integrity
Secondary Trait: Sincerity
Tertiary Trait: Honesty
Negative Trait: Blunt
Magic: Protection, Focus, Water, Truth
Description: This, as a primary soul color, can only be applied to human souls. Blue souls are deeply in touch with their inner thoughts and wisdom, often able to use their understanding of the self to pull the unadorned truth from others. They are best suited to roles that capitalize on their insights while also making sure they have a clear path to the understanding they crave. This need for honesty and understanding can often get them labeled as blunt as a blue soul, while following a particular train of thought, will sometimes demand the answers they seek without keeping in mind consideration for others.
Slate
Main Trait: Morality
Secondary Trait: Loyalty
Tertiary Trait: Respect
Negative Trait: Strict
Magic: Assist, Ideal, Shield
Description: This, as a primary soul color, can only be applied to human souls. Slate souls benefit from the inward self knowledge from blue as well as the discipline from violet, resulting in a strong moral code that helps define their lives. Often referred to as chivalrous, they are best suited to supportive roles or roles that uphold law. If not properly mitigated however, this need for order and adherence to their personal code can cause a slate soul to become inflexible and intolerant of others that think or act differently from them.
Violet
Main Trait: Perseverance
Secondary Trait: Disciplined
Tertiary Trait: Proper
Negative Trait: Obsessive
Magic: Divination, Dream, Spirit
Description: This, as a primary soul color, can only be applied to human souls. Violet souls are unique and greatly adaptable to changes, often falling back on past experiences or reaching out subtly with magic to gain a better understanding of the situation. They have the greatest control of their magic and/or abilities and will practice tirelessly until they’ve mastered anything new. That drive for perfection can be their undoing however. Violet souls can easily become obsessed with learning new things, often forgetting promises and previous engagements in favor of mastering their newest skill.
Plum
Main Trait: Devoted
Secondary Trait: Fervent
Tertiary Trait: Attentive
Negative Trait: Relentless
Magic: Alter, Heart, Charm
Description: This, as a primary soul color, can only be applied to human souls. Plum souls are the second-strongest of the souls (second only to red souls). With the power from red and the mastery from violet, they are considered the masters of their personal lives. Where red souls are like a hammer shaping the world around them, plum souls are like a refined chisel, carefully and masterfully altering their personal lives to better support the causes and people they believe in. Unfortunately this tireless shaping can sometimes be too narrow in scope, causing them to lose sight of the forest for the trees and their connections with others can suffer for it.
White
Main Trait: Love
Secondary Trait: Hope
Tertiary Trait: Compassion
Negative Trait: Open
Magic: The magic largely depends on the individual but is heavily influenced by the emotion of the wielder.
Description: This, as a primary soul color, can only be applied to Monster souls and Plumey/Tuffty Bitty souls. While the exact nature of a soul isn’t fully understood, it is generally accepted that white souls are a culmination of all colors rather than the absence of all colors. Like light, the magic emanating from white souls can be refracted into pale versions of all known soul colors, suggesting that white souls in their natural state are the epitome of goodness and connectivity to others. However, this openness comes at a price as it leaves those with a white soul open to manipulation and betrayal from their relatively trusting nature.
You may be wondering why the "negative" trait isn't just the opposite of the primary trait. Well, in my mind, it feels more interesting for the negative trait to still be the primary trait, but twisted in some way, like if it was pushed too far. Even a good thing can be bad if you get too much of it after all. Once again, this is all just how I view the souls and various things associated with the colors (which I get mostly from the original traits from Undertale and various notes from color theory).

...i've been seeing the word Plumey so many times i read 'Plum' as plume (like feather) and not plum (like fruit/color)
