They do in away - except you cant turn them into a car/truck/airplane, etc.....

Infact, I just finish building, painting and decaling the two kits, which is the Delta Plus and the Rezel General Revel type, who knows I may post a few pics of them myself^^

That really depends, I can name just a few off the top of my head, for example: Zeta gundam from Zeta series can turn into a space ship/fighter jet type mode called the wave rider, Delta Plus from the Unicorn gundam series can turn into a fighter jet type mode called the wave rider, the Delta gundam and the Z Plus from the Unicorn and the Gundam Sentinel series which can turn into a fighter jet type mode called the wave rider, the Rezel/Commander type or General Revel type from Unicorn gundam series which can turn into a space ship mode. Then there's the RAS-96 Ankusha from the Earth Federation side which is the successor of Asshimar of the Titan(Zeta gundam series) from the Unicorn gundam series that can turn into a sub-flight system which is also close to a wave rider. 

And that's not even counting the gundams from gundam 00, gundam X after war and gundam wing, so all that really depends on what type of gundam you are referring to^^U
