I love this new model, though I think they should have saved the new Hunter Beta for a game set post Resident Evil 6 and 7. As in, the old Hunter Beta was a bust, but they finally got it right. It could be used as a "pack leader" that coordinates other Hunters to chase down their prey, like a pack of wolves.

Yeah, we haven't really seen hunters work together in the serious so far though... At least I think. I also love that by taking damage these hunters start to look more like their original gory counterparts in the original.

The Hunter Gamma is also a good redesign, and I also think it should have been a "Hunter Gamma 2.0" developed post-Resident Evil 6. With stuff like the C-Virus, all those less-than-effective BOWs could easily become viable threats.
Once you get past the whole "human experimentation and rights violation" part and apply some cloning tech, an army of BOWs controlled with Las Plagas would actually be pretty badass. Whole divisions of T-103s led by Nemesis as leaders, Hunters and Lickers as scouts, cloned Majini as lesser infantry and cannon fodder...
Frankly, my only major complaints about this remake are no Grave Worm, no Nemesis free-roaming and... That. Fucking. Nose.

Lmao same, mine only complaint would be the lack of a Clocktower level, nemmy is ok for me except he feels way more scripted than in the original, but I was expecting that anyway.

Pretty much. I would complain about his getup, but honestly I didn't even notice it wasn't his original leather jacket.
The gist I'm getting from the last remakes is that they're going for a "really experimental weapon" vibe, not a final "ultimate weapon" product. Mr. X and Nemesis really look like they were made in a secret lab on hushed-up budget and don't look like animesque stylish super monsters, more like things that were grown on a vat or transformed crudely, don't look quite human and are a bit cobbled-up together (thus the medical waste trashbag look of Remake Nemesis, or Mr. X's face looking like a frozen clay statue with circular patterns).
Some of it is justifiable, but the some is just play annoying. Like Mr. X's final form just having one claw and now armored shell, some of William's monster stages looking like the Thing from John Carpetner... OR NEMESIS HAVING A FUCKING NOSE.Β Β
