This is so lovely! I like it so much!
I'm thinking about doing adoptables too. I think you should start researching some groups and taking a look at other people's adoptables and take some notes. You're surely to create some impressive stuff!

heya!! i'm unsure how much advice i can give (started out myself just a little while ago), though maybe observational reports may help?
it completely depends on a couple of very different factors. for one, what your art will be seen worthy of, for another how much worth you see in your art, and another, if there is a market for it.
i like to browse for art of similar quality/themes that i am drawing (for example DnD) and compare prices, how receptive others are to the designs depending on this and other factors, popularity etc.
usually, if you have an audience already, it tends to be easier to sell?
though you can always post an 'experimental' adopt or batch, to gauge the reaction - start 'small', so to speak, and later on even heighen prices etc.
i started out comparing prices & going with an auction, placing the starting bid on a price that i can confidently part with my artwork (given that you always invest time and are possibly emotionally invested as well), though not stellar so people can still afford a design if they are interested (this of course depends on personal perception!).
as auto buy, you can of course set whichever you feel fitting; it can be high or low, depending.
with lower, you can tell a bidder 'hey, it's reachable!' and make it more approachable; with higher, you encourage bidding and, if the artwork is a rare one, people may be interested in investing (for example with rare species).
(i'd advise to start out slow, though it's completely up to you!)
another option is to start out with simpler batches/designs and lower prices, to heighen the amount of details and prices with time or just add more intricate batches additionally to simpler designs.
comparing prices can be a bit iffy though; artists with a larger popularity/following in the adoptable scene can set higher prices than, say, someone just starting out, which can make it tricky to find the right balance.
as far as i can see at least from this piece of art, you have a lovely flow to your style; i'm certain it would be well-received (though that is just my personal opinion).
so, basically, depending on what you'd feel most comfortable with, you can try something experimental; either a small batch, or an intricate design, set price or auction.
i hope this was in some way helpful!! please feel free to ask more - i will try my best to give answers!

This is extremely helpful thankyou! Are there channels to announce that you have an adopt available beyond just groups? I am a bit of an oldschool DA user so I am not super familiar with how exposure works now.

Ofcourse!!
Ahh announcing is a bit tricky. Usually - as far as I know - you can, at least on DA, only advertise/announce via groups or in the specific section.
e.g.; always make sure it's posted in the 'DeviantArt Related > Devious Fun > Adoptables' section.
You can try promoting via different websites at the same time; if it's an auction/setprice, you can post them on Tumblr under 'open adoptable' tags, and possibly on other websites (if anthro, Furaffinity? though i've zero experience with that).
What could work as well is making a small preview/sneak peek of the adopt; a sketch or a small excerpt like the face, and post it in the section, to make people aware that something will be coming up!
Also, if it's an auction, you can post something like a reminder in the section after maybe 24/48 hours of no bids, with a link to the original auction; that can sometimes re-ignite it.
Asides from that... posting the adopts in different groups, to different times. For example, you start out with two large ones; if nothing comes back after 24 hours, you post it in another two or three groups, and so on and so forth. It may help keep it on the surface!
I'm super sorry for not being able to offer more advice on this; exposure is really difficult when it comes to DA, especially with adoptables.
You basically gotta try and make it stay in the eyes ,,,
