I don't have a really deeply defined reason, just that her color scheme matches her cutie mark: pink, green, brown, and orange. It has to do with her special talent: making diversity work together.

So, quick question.
Based on the earlier, brief description of their early relationship i assumed that Spumoni was also a member of the guard or at least was part of the pegasus guard training camp in some way.
But here it looks like she is a formation, stunt flyer like the wonder bolts.
So what does she do for a living at this point? Is she a stunt flyer or is she just doing this in her spare time?

She's a stunt trainer. Stuntwork is in my opinion a very basic part of guard flight training: Agility, quick reaction time, flying in formation, etc.

So that means that she has to 'train' a pony who is not only a natural athlete, but also the first pegasus to successfully fly the Razorwind Canyon?

Not quite. He's not part of the stunt team or one of the rookies who trains with them. He's already been with the guard almost a year and in that time he and Breakneck have proven themselves. That's why, as young as he is, Breakneck is taking a position with the stunt team as a coach/trainer (along with Spumoni).

Ah, that makes much more sense. I was wondering how he would have passed the class when all she would have had to do is give him demerits every time he asked her out. Still, if he is too forward too often she could file for harassment which might be ground for booting him from the OTC.

Not to worry. One of the reasons I've been looking forward to this story is that most people don't see Rook as anything other than arrogant (like Rainbow Dash). On the contrary, he's contemplative, considerate, and VERY respectful. Which is basically the lesson that Spumoni will have to learn about him so this arc is a bit meta.
