I think it's because Sans ultimately realized, Frisk didn't need all that much protection.

Hell, even against Undyne, Frisk didn't need much saving; though he did distract Undyne long enough by pretending to sleep at his sentry post for Frisk to get away.

My first play-through, I was like "He was protecting me?". Then I remembered that he's all over the place, and some stuff along the way were too convenient, or weird, like that annoying-dog-of-his just pops-in in my inventory. And also the troll signpost in the middle of the river in flower puzzle room was his doing. lol (or maybe not) XD

I don't think he had anything to do with the annoying dog though, that dog is a creature of his own, hehe. But you're right, some things did look too convenient. When you're walking in the Waterfall an seemingly come to a dead end, there's a fake telescope with a clue to check the wall. When Undyne is chasing you, he just happens to be sleeping in his sentry booth to distract her. But he never interferes in your fights though, and you die as many times as it takes, big help indeed.
