I will never understand how it is that people are able to do awesome fractal stuff like this. I mean, seriously, how do people do it?? Does it take, like, a ton of planning, or something?

It takes tons of planning (like most good and complex art), patience, LOTS of thinking and good knowledge of basic and some complex math. Also knowledge of some rules of aesthetics.
