and she did a brave and right thing..... it is much more pleasurable to eat it that way.
What kind of oil do you use for frying? Is it the same for deep- and stir-frying?

We usually use canola oil for most cooking.

Oh I see. Is it a healthy oil in your opinion?
Since we don't use it at all in Italy I had to google for it and I found discording judgements about it.

Well, it is supposed to be healthier than animal fats or peanut oil. On the whole, we don't consume much oil. So, I suppose it would do no serious damage. In fact, we don't often fry our food. So, what kind of oil do you use in Italy?

Well, the most used food oil in the whole Mediterranean region is the olive oil (with "virgin" and "extra virgin" kind being the two purest ones). Frying and a few other kind of food preparations can also be performed using either mixed- or specific-seed oils.
Nut oils are rarely used, but frequent use of aninmal fats (e.g. butter) can be found in northern regions, as well as all the continental and northern Europe.
