Hmm... I would say Princess and the  bounty hunters (you can see I love Princess Mira) but I can't choose between these episodes: Aku's Infection, Birth of evil (1,2) ,Jack and the Lava Monster,Jack and the Ultra-robots,Jack and The Three Monks,Jack Remembers the Past,ack and the Zombies,The Four Seasonof Death and Tale of X-49. Because show was that good

I cried with x-49 T-T.
The birth of Evil was very...WOW to me. I also liked the graveyard episode where he fought all of those zombies. 
I agree with you, its hard to choose just ONE episode. This series utilizes every tool they have under their belt and can use so little and yet it delivers so SOOO much. I can recall episodes where they did not even use diolauge. It was just a long silence until the big reveal, you know whats going on and you can't help but love it!
