I'm not sure, really. I think it's probably because she's been the one with the least quotable line she she seems more "normal" than the other ponies. They all have certain attributes and different personalities, but I think they're all so extreme in contrast to Applejack's own that she kind of unfairly gets forgotten and dismissed a lot of the time.
