Personally I would leave it with one eye as two would shrink the image and you would loose the great detail you have now. Also and my opinion as well I think your current avatar has a kind of emotional energy that would be lost as well. I really like that you didn't just look straight into the camera but looked up giving the immediate sense of someone lowering there head to scrutinize an object or lesser being.  Now part of that impression comes completely from your profile name

Most of all the angles and straight lines comprising your avatar are so nicely balanced, heck for that reason alone I wouldn't change it.
