But I have trouble with this scale. What is on the scale between stars and galaxies

I suppose that's why so few do it. There aren't many benchmarks for that size. There are a few objects, like star forming nebula, which are on that scale, as well as simply showing her body being larger than the space between some of the stars. Both would convey that scale. However, I think what you've chosen works as well, if a bit on the small end.
