Quick-n-Dirty Enchiladas:Supplies
-1 container enchilada sauce
(OR juice tomatoes, add water and chile pepper powder to taste, and boil to dissolve brown sugar to taste in the sauce)
-fresh and/or canned vegetables: tomatoes, onion, bell pepper, olives, corn, beans, mushrooms (in any combination)
-herbs: cilantro
-tortillas, it helps if they are not the kind that crack when you fold them x.x
-cheese as desired: sliced or shredded
-filling protein (chicken, beef, shrimp, tofu, lamb)
-baking dish (size according to how many enchiladas you want to make
Directions:
-chop all vegetables into bite size pieces and layer on the bottom of a baking dish, beans and corn can be sprinkled throughout straight from the can
-add some of the enchilada sauce to the bottom of the dish
-cook enchilada filling (ground beef, sliced steak, sliced chicken breast, tofu, seafood etc...) with some taco seasoning, optional onion and mushroom with the meatf
-place tortilla atop vegetables, put filling in, and fold, until you have filled your pan
-top with sliced or shredded cheese as desired
-pour the remaining sauce over the enchiladas and bake at 350 degrees for 40 minutes, covered with foil (poke holes in it) and then for about 5 minutes uncovered
-serve atop brown rice w/cooked vegetables, lettuce, and anything else as desired!
-enjoy! ^.^

haha I've been making them way too much still good though. If I make them there's always leftovers.
