I have a tip, hope you don't mind. before you start sewing, do a study on what your about to make. like the ninja turtles for example. I did a study to show me how their bodies work and where the seems would go. it makes them 3d and look like a plush from the store. I hope you get what I mean. it helps make them look not too 2D-ish. if you want I can post my study pics if you don't understand what im talking about. I don't think im describing it right. :/
