Sun and Blake have completely opposite approaches to stressful situations. Also, Sun has no respect for privacy, which is a big deal for introverts like Blake.
Plus, the two only started seeing eye to eye when they realized that theyΒ΄d have a second Beacon incident if they didnΒ΄t do anything, and fast.
Whenever Blake is feeling down, Sun tries to cheer her up, which may be fine for some people, but Blake needs to know that her feelings are valid, because Adam made her think they werenΒ΄t. And by tying to cheer her up, Sun is telling Blake that she shouldnΒ΄t be sad, which is the exact same thing Adam did. Sure, Adam did it on purpose, but that doesnΒ΄t change the fact that theyΒ΄re both doing it.
The first time we, and Blake, saw Sun, he was messing with the cops, which soiled the reputation of faunus as a whole.
He snuck into the teamΒ΄s dorm room, practically insisted they take him and Neptune on their little mission, and then went to go grab noodles during the final battle.
When Blake went home to get away from everything, Sun followed her, and it becomes clear once they arrive in Menagerie that he had no plans for where heΒ΄d actually live while there. He just assumed Blake would let him stay with her. Also, he told Kali about BlakeΒ΄s friends, when it was apparent that Blake didnΒ΄t want her parents to know about them. Again, privacy issues.
And as for Blake not being interested in Ilia, well, the two havenΒ΄t seen each other for years, probably, and the first thing Ilia does is spy on them and then try to kill Sun. So no, the fact that Blake isnΒ΄t interested in Ilia right off the bat doesnΒ΄t mean sheΒ΄s not into girls.
As I said before, Blake is an introvert. Introverts need longer to open up to someone, so while I do believe there is potential for Blake and Ilia (about as much as for Blake and Yang actually), they would need a lot longer to really develop a relationship. Sure, Ilia has a crush on Blake, but that would only make things more complicated, because Blake doesnΒ΄t know if she feels the same way about Ilia.
By the way, in what way do you think Ilia is a better gf for Blake? I mean, we barely know anything about Ilia, so how can you be sure that sheΒ΄s a better fit for Blake than Yang?

Blake needs someone who respects her feelings and boundaries, and Sun just isn't that kind of person. Blake wanted to get some distance between herself and her friends because the thing she was most afraid of had just happened, and Sun followed her, in secret no less.
He hadn't thought about staying anywhere while on Menagerie, and just assumed Blake would let him stay with her parents.
He told Kali about Blake's friends when it was clear that Blake didn't want her parents to know about them.
He only started taking things seriously after he almost died, and even then he was still not fully committed to solving the problem.Β
Blake made her problems with him very clear on that ship, she literally spelled them out to him, and it just makes me mad that people don't get that introverts aren't extroverts.
She needs her alone time sometimes, to work through her problems herself and figure out why she feels the way she feels. Sun is pretty much the exact opposite of that.

The difference is that Yang understands Blake's problems, and can relate to them.
Yes, both Sun and Yang are upbeat and friendly, but when Yang sees that Blake is feeling down, she doesn't tell her to not be sad, she lets her know that it's ok to be sad, and that she's there if she wants to talk about it.Β
Yang only lured Blake with a laser pointer because Blake's behavior was obsessive and harmful, but when Blake went home, she just wanted some alone time to think about everything that has happened, and sort things out at her own pace.
Blake wasn't avoiding everyone "like and idiot", she was avoiding someone like someone who went through an abusive relationship with a psychopathic mass murderer, who had tracked her down and ruined the live of one of her closest friends.
Blake has a lot of emotional problems due to Adam, even now that he's dead, and just because she doesn't parade them around like some other characters doesn't mean they're not equally valid.
During the first 3 volumes, the one thing Blake was most afraid of was that Adam would find her, and as she made friends, she was afraid that he would hurt them to get back at her for leaving him. When that happened, Blake decided to get some distance between herself and her friends, and think about whether or not it really is her fault that Yang lost her arm and, by extension, everything she based her entire identity around.
It wasn't, sure, but even when it came to her semblance, Adam controlled her way of thinking, convincing her that it's a coward's semblance to make her feel scared and stay close to him so he can control her.
Another difference between Yang and Sun is that, when Sun and Neptune were knocked down while fighting Roman, they just went for noodles. After Yang worked through her own issues at home, she went to find her mom, an armed and dangerous bandit leader, to force her to help her find Ruby.
Once Yang is friends with someone, she'll kill and die to protect that person. She'd go to lengths Sun doesn't even know are possible. Sure, he's fun to be around, but he is careless, doesn't take anything seriously, and has no respect for personal boundaries. Unless a friend is hurting themself, Yang will let them handle their problems in their own way and offer her help, instead of forcing herself into other people's lives, expecting them to let her crash on their couch, and tell people about parts of their lives they don't want people to know about.
Telling Kali and Ghira about Team RWBY may not seem too bad to extroverts, but it took away Blake's autonomy and, believe it or not, is a violation of her privacy and a breach of trust.
Blake has put up with a lot in that volume, and I've personally lost my temper with people for less, but I just don't see Sun and Blake getting together any time soon, because of the things Blake literally spelled out for Sun after they killed the Sea Feilong.
Those are all the reasons she doesn't like him, they're right there, and before you expect Blake to change, she first has to figure out who she even is, because a lot of what she told others about herself in the past was due to Adam's influence, and she has to get that out of her head first.
