I've done sculpting for a little awhile but not much of customizing breyers.

How are you doing this? I know you melt a breyer and then stick it back together in a different way, but is there more to it? do you know any good tutorials?
I've only repainted breyers, never really reposed one

I tried to melt the first one a bit. I don't really recommend it unless you are just moving a joint slightly. I dremel wedge-cuts into both sides of the joints to move them. Then I fill them in with magic sculp(apoxy) after I am done posing them.
As for a good reference to this kinda stuff visit ModelHorseBlab(I'd say like the biggest horse model website, though you might have to pay to see some of the perks but there are lots of folks on there that have done customs and have tutorials) then there is fallen-leaves, also a horse model website.
