Actually I did some reading and actually JES is an acronym for Justice Edge Swordsman, but alternatively it could be a reference to the Jesuits.

.... at least he looks badass. Nothing against religions of any peaceful kind but... Jesus had a robe.... Jesmon is a holy knight. Knight! Meaning cool Armor and swords and everything. I appreciate wat Jesus did for us, but it's not like the Digimon people made Jesimon to offend or "rip-off" Jesus/his believers. They probably did to add some sort of "god like" being and just used Jesus as a base cuz he'd more known.
